Not Your Ordinary Lemonade Cheesecake

Recently I made the best no bake lemonade cheesecake! If you love cheesecake and lemon then you will want to try this recipe out!

I pretty much just made this recipe up as I went along. My inspiration for it were our favorite Girl Scout cookies- Lemonades.You will need two packages of them along with some frozen concentrate lemonade, an 8 oz of Cool Whip, and one package of cream cheese. You can use the reduced fat or regular. I used what I had on hand.

I halted one package of Lemonades and placed most of them in the bottom of an 8x11 Pyrex dish.

For those that would not fit I crushed them up in a sandwich bag.

I then sprinkled the crumbs in the dish to cover up any area that was uncovered.

Next up I used my mixer and added the cream cheese, cool whip, and lemonade concentrate. This is where you need to decide just how much lemon you like. I added half the concentrate but next time around I will probably use a tad more than a quarter. It came out supper yummy but probably a tad tart for some. You can add a quarter mix it and taste test and then if you think you would like to add more then you can. Or if you think you have added too much and have extra Cool Whip on hand you can always add a little more cool whip to cut the tartness down. This recipe is really a no fail.

Next I scooped it all on top of the Lemonades.

Use a spatula to spread the mixture evenly.

Next up place whole Lemonade cookies on top and place in the fridge over night.

Scoop out a serving with a spoon.

We added whip cream on the top for some extra yumminess!

Since Girl Scout Cookie time is only once a year you could substitute Pepperidge Chessman Cookies in place of Lemonades. Keep in mind if you do substitute then you may want to add the full half a can of lemonade concentrate.

  2. Pamela, that looks delish! I didn't buy the GS cookies this year, but we buy Kroger's lemon cookies regularly, and they are so cheap and so good, I may just have to try this. I LOVE lemon anything! Thanks for sharing!

  3. Oh, Pamela...we just bought our fill of Girl Scout Cookies from my little niece...I didn't even know they had the Lemonade cookies! I'd really like to make this. I LOVE lemon anything!!! This looks so good. Don't feel like you have to be a foodie blog---we all love recipes!! :)

    1. Hi Pat! I am so sorry I have taken this long to get back to you. I am taking a little break but will be bringing THT back probably in the summer. We have something major in the works for our place and I have been so busy with the planning and prep that I have not had much time for anything else.

  8. Oh I love anything lemon and may have to try this on my only sweet day of the week. I am cutting down to eating sweets due to High blood sugar

    But one day I am trying this, Nabisco has a lemon cookie also even though the Girl Scout cookie is the prettiest haha Thanks so much for the recipe and instructions
